shaken, with a twist


After realizing that September's Avid Baker's Challenge was another yeast-based recipe, I was shaken. I mean, we all remember how my "focaccia" turned out: flat and crispy... basically, the exact opposite of focaccia. But I was ready for a redemption, so I gave myself plenty of time to let this baby rise for as long as it wanted to (and it wanted to rise All. Day.).


I wasn't crazy about the idea of apples in the bread, so I only did half the amount called for, and the other half I replaced with crunchy pecans- a perfect complement to the cinnamon and apples. I replaced some of the all-purpose flour for whole-wheat flour and reduced the sugar in the dough because I knew the glaze would be sweet enough. 


Speaking of the glaze, it's completely unnecessary (and I normally love glaze). I even made the glaze with cream cheese so it was extra tasty, but since the bread isn't too sweet it just seemed to overpower it. The recipe makes 2 loaves and one loaf I glazed, the other I left plain, and the plain one not only lasted longer, but it was amazing sliced, toasted and slathered with butter (as are most breads, I realize).

no double trouble here


I realize my blogging has been sporadic lately and when I re-vamped this blog (almost a year ago!) I was determined to keep the content at a 50/50 ratio between beauty and baking. Lately, I've been feeling a little tapped out in the beauty department. I genuinely don't want to recycle information that you can find from every other magazine or blogger, so I'm only going to post on beauty when I'm really passionate about a product or topic (or if anyone has a particular beauty question that needs answering). 

So I guess I'm saying that the blog will be a little more baking heavy and not so evenly balanced with beauty, as it used to be. With that said...


I have a toddler who is obsessed with muffins. She wants them everyday, all day. And I cannot go to the grocery store without her demanding a muffin to occupy her time in the shopping cart (the tough life of a toddler).

Chunky Monkey Muffins

Ok I know, another post about muffins but they're are so portable and easy to make (and eat) that I can’t help myself. Also, I was inspired. A co-worker of mine had a store-bought muffin that was banana walnut with a chocolate drizzle on top and I thought, “I can make that!”  So here it is, just healthified slightly.
There's avocado (as the butter/oil sub), some whole-wheat flour, banana's and walnuts (for some crunch and those wonderful omega's) to keep these muffins on the yummy, healthy side. Although the chocolate chips aren't necessary they do taste wonderful in here... but that's also how I feel about any chocolate added to a recipe.
