a different kind of whoopie

I have had pumpkin whoopie pies before, but never one like this. Soft chocolate cookie with pumpkin cream cheese frosting in the middle- yes please! I saw these in the latest Food Network Magazine and had to make them. The only adjustment I did was instead of doing just cinnamon, I added pumpkin pie spice to the frosting and more confectioner's sugar to thicken it up a bit. These are perfect for Fall and Halloween!

2x the baking

Is this what people call "nesting"? Last night I made a pot roast & mashed potatoes for dinner and 2 desserts (who are we kidding here, obviously I have a sweet tooth!). The Raspberry Bars are made with my mom's homemade jam, so they are extra special, and the brownies (also made from scratch) have walnuts and a delicious chocolate frosting on top- they are so rich and divine!

The Drum Cake

What, just because I got pregnant at the beginning of the year means I can't bake anything anymore? Well, partially yes, actually. Between being sick, wacky taste buds & not having energy, I'm amazed that I've done anything with myself. Nonetheless, my Dad turned 60 recently & when he was younger he had a Drum cake that he has requested every year since then.



The cake is an 8" vanilla cake with French Vanilla Custard filling and Swiss Meringue Frosting. I also made 96 (!) cupcakes for the occasion because it was a large birthday party. Honestly, being 9 months pregnant didn't make my life any easier when I was doing this cake, so if it hadn't been for my wonderful sisters to help me along the way, it would've been an utter disaster- thank you sisters!
